Chia seeds are amazing! Not only because they can grow fake sprout hair on a piece of pottery… They are a superfood!

You can add Chia Seeds to almost everything! From on top of a salad, yogurt, toast, to adding a tsp to a smoothies or oats! Use them in baking anywhere you would use flax!
They really have NO flavour, and you can blend them to a fine texture so you cannot feel the texture on your tongue. Or you can let them get a jelly coating on them as they absorb water almost like a mini bubble tea texture. I like them either way!
Don’t buy the processed tablets you will see online or in stores! Just buy the seeds, in containers, bags, bulk, much more cost effective, and is more natural! White vs dark, it doesn’t matter they have the same nutritional content
Give them a try… if all else fails spread the left over seeds after soaking them, on a piece of pottery and make a chia pet

Well we finally got here, after a stressful day of dealing with the freezer mess, and packing up the trailer, we were on our way! We arrived at 9:30 and quickly set up, and still had time for the kids to meet up with their friends, while we started a fire. Smore’s were had by all but me, as I wasn’t hungry. I am sorry there are no photos, I can’t get wifi here, and my phone doesn’t allow me to take photos. For breakfast, Overnight Oats in a Jar! Lunch is yet to be determined but I see a future of salad and fruit in my future! It’s warm already!
Bring on the Long Weekend…
I am really looking forward to hubby to be off for a week, I may be a little spotty with my posts over the weekend, and for that I am sorry!
Today is going to be a busy day, as regardless of our plans or what was decided, we are getting out of Dodge for the weekend. I need to pack and get my house and yard in order… so a Chocolate Covered Strawberry Smoothie with a shot of expresso was on the menu today…
This Smoothie is one of my favourites!
- a handful and a half of baby spinach
- chocolate protein powder
- tsp chia seeds
- 5 whole Frozen Strawberries (or not so frozen anymore in my case…)
- shot of Davinci Sugar-free syrup
- 1-2 c ice
Calories 241 Carbs 24 Fat 5 Protein 28 Fiber 12
Lunch was going to be a cleaner taco salad…
- 2 handfuls of baby spinach
- 1/4 cup of black beans
- 3 tbsp of fresh salsa ( I like Penny’s Salsa )
- mini cucumber
- Shredded tex mex cheese
- 1 tsp of pureed avocado
BUT, someone left my freezer open!! Ugh… now I am sure it will be an assortment of frozen foods all weekend just to use it up… sigh!
Well… I am off dealing with the mess, and trying to decide if we still want to bother going now…
Big bowl of Salad for supper last night!
In the Bowl:
- baby spinach and romaine
- A handful of snow peas
- half a beefsteak tomato
- julienne slices carrots
- a mini cucumber
- M&M Meat Shops Bistro stuffed Chicken, Spinach & Ricotta (160cal)
Last night at aquafit the instructor changed it up and did intervals, with some plyometrics IN the water. It was great, I could feel the burn, and had to work way more than normal, which is awesome, as that is why I go! (This however didn’t stop me from muttering under my breath about my “love” for her!) There was a midnight swim at the pool after the class, and since my kids played nicely at the playground while I did my thing I promised I would let them stay for an hour. I had tread water for probably an hour being the only adult in the pool. When a friend of mine showed up to watch her kids from the deck, so I got out happily and visited till 11:30. The kids were in their glory! …swimming outside with their friends WAY past bedtime!
This morning I felt a like a smoothie but felt like I wanted to “eat” something so a smoothie in a bowl was in order To help make the smoothie even thick and creamier I added a pinch of Guar and Xanthan gums…
Today’s flavour was Chocolate & Peanut butter with some PB Granola sprinkled on top!
In the vitamix:
- couple handfuls of baby spinach
- tbsp PB2 powder
- 1 scoop chocolate protein powder
- 1 tsp chia seeds
- 2 baby apricots
- 1 1/2 tbsp greek plain yogurt
- 1/2 tsp cocoa
- 1 shot of Davinci Sugar-free Chocolate Syrup
- pinch of guar and xanthan gum
cal 268g carbs 21g Fat 5g Protein 36g Fiber 10g
With the added PB granola (33 cal, and worth every single one of them!) It made it seem like an even better treat!
I have some running around to do today, and am going to prime the outside of the house where the new bay went in a few weeks ago, as it has finally been a couple days without some rain! Have a great day!

Sigh… Our planning/decision making isn’t going good…We had an alternate site at a different resort lined up for this weekend. This sounded great but our only dilemma was it was only for the weekend and not for the full time hubby was off… however they told us to think about it and call back, and 5 min later when we did, it was gone It seems to be our luck lately!
Well, I’m off to decorate a cake…

Wow, hard to believe I am the same person who whined about how dreary our summer had been, when I have been stealing away inside, finding myself on here rather than enjoying the sunshine we have been having!
Last night’s supper was Super Good! The family had a desire for burgers, and since I have my stash of my favourite veggie burgers in my freezer I wanted one too!
Using an Earth Grain’s Thin Bun, I slathered on some Hummus, a slice of jalapeno havarti, a slice or two of tomatoe, lettuce, and an ultimate meatless burger pattie…I created burger nirvana! It was SO good! On the side I had some greens, with blueberries and a tiny amount of goat cheese, and some Alexa sweet potato fries.
I didn’t finish the fries as there was too much food, but it tasted amazing!
This morning I started off with a Mocha Coconut Smoothie
We need to make some plans as to what we are doing the rest of this summer… we were booked to go camping at a lake near here, but due to the spring rains, our site we booked in May is still underwater Good for the Lake, but not for us! Hubby is off for a full week starting Friday so we could go anywhere, but I have an obligation on the 3rd… what to do, what to do…

When picking up our eggs today from my neighbor we learned that one of her hens successfully hatched her own clutch of eggs! Me, being me, and a fellow chicken owner I was excited! We have only hatched eggs in an incubator and have never had any of our chickens lay (whole other post ) So back to the vehicle I went to grab my camera, and then I set out to see the circle of life in action.
The were the sweetest little fluff balls following around their mom, and searching for food. It was really neat to hear her chirp and cluck to her chicks to communicate with them, especially to a larger teenage chick that she adopted. She yelled at him a few times! It sounded like a honk almost…
She also had 3 pigs! Oh, how I want a Wilber of my own, however I know it’s fate, so at the auction it stays!
I love getting free range eggs from our neighbour… however, I will love it even more when we get to start collecting our own eggs from our Chickens!
Once we got home, my hubby being all so sensitive, said he had a hankering for egg salad sandwiches… after thinking about it for a moment, and the thoughts of cumin and curry came to mind, and I agreed…
In the pot they went…
For the sauce:
- Reduced fat Mayo (you could use greek yogurt instead and make it clean)
- Curry Powder
- Flax seeds
Slice up some egg…
Top a leafy green, and cucumber on some sprouted grain bread, and we enjoyed with some fresh fruit! Don’t mind the bite out of the watermelon as I was starving while making lunch, and taking photos didn’t help! lol
Nothing like fresh! Have a great one! Off to spend some time with the family!
This morning we ran and did some errands in town, and since it was Tuesday we got to go and buy fruit from the fruit truck. YAY! My kids are always excited to pick out fruit especially after sampling it’s yummy goodness!

We Love when the fruit truck comes to town once a week, however I am sure my wallet will love when summer is over and we aren’t buying premium priced fruit! lol We spent over $30 Oh, well a bag of chips costs how much?
I’ll take these instead any day!
For once I planned ahead, and finally made overnight oats in a jar again. I have been thinking of them a lot lately, however, it is usually when it is too late to make them for the meal I want! … like 9am when I am wanting something to eat NOW!
Into the Jar went:
- 1/3 cup Large Oat Flakes
- 2/3 Almond Milk
- 1 scoop Chia Seeds
- Dark Chocolate Almond Butter
I spent the night dreaming about all the wonderful flavours of peanut butter from Peanut Butter and Co. I had bid on a sampler The Big Six at #TGFA… only to be outbid at the last minute I then frantically spent the evening trying to find things to bid on that were still going AND shipping to Canada. I did end up winning an auction in the end. It was an amazing fundraiser, and Janetha G deserves a round of applause!! In the end with her guidance the online community raised $26,432, through auctions and monetary donations.
…and I woke up to this!
YUM! I love Overnight Oats in a Jar! After adding a little Peanut Butter Granola, and a diced apricot, I dived right in!
Today Hubby is off and we celebrated the day off with some of the yummy Turkey Sausage Breakfast Patties I got last time in Costco with some farm fresh free-range eggs from my neighbour (My chickens still aren’t laying yet… will talk about them more another post) on mini ciabatta buns and some yummy watermelon cubes!
