When picking up our eggs today from my neighbor we learned that one of her hens successfully hatched her own clutch of eggs! Me, being me, and a fellow chicken owner I was excited! We have only hatched eggs in an incubator and have never had any of our chickens lay (whole other post
) So back to the vehicle I went to grab my camera, and then I set out to see the circle of life in action.
The were the sweetest little fluff balls following around their mom, and searching for food. It was really neat to hear her chirp and cluck to her chicks to communicate with them, especially to a larger teenage chick that she adopted. She yelled at him a few times! It sounded like a honk almost…
She also had 3 pigs! Oh, how I want a Wilber of my own, however I know it’s fate, so at the auction it stays!
I love getting free range eggs from our neighbour… however, I will love it even more when we get to start collecting our own eggs from our Chickens!
Once we got home, my hubby being all so sensitive, said he had a hankering for egg salad sandwiches… after thinking about it for a moment, and the thoughts of cumin and curry came to mind, and I agreed…
In the pot they went…
For the sauce:
- Reduced fat Mayo (you could use greek yogurt instead and make it clean)
- Cumin
- Curry Powder
- Cilantro
- Flax seeds

Slice up some egg…
Top a leafy green, and cucumber on some sprouted grain bread, and we enjoyed with some fresh fruit! Don’t mind the bite out of the watermelon as I was starving while making lunch, and taking photos didn’t help! lol
