Oats from Start to Finish… BC to AB

This morning we got a LATE start!  There was no option of white water rafting when we rolled through Jasper, as the last run starts at 3pm.

Fast Food Breakfast!

I started out my day with a plain oatmeal from Tim Horton’s that I doctored up with some Chia seeds, Marantha Dark Chocolate Almond Butter, and some blueberries I packed with me, and an extra large green tea.  (FYI: do not drink green tea on a road trip… especially when bathrooms are few and far between!!)

It did allow for my kiddos to discover a raspberry bush that they raided and made some type of jay bird MAD!  It was going crazy! I couldn’t help but then stalk it taking photos…

Here’s a pick of Picky Hubby at the same rest stop.  

We went by Mt Robson again, but this time we just stopped at the sign and trudged along to Hinton where we stopped for Lupper*. *Lupper: A hybrid of lunch and supper.

We lost an hour in our travels and by the time we got there it was 4pm.  I had a Dairy Queen Chicken Flamethrower, and it was not that great and had WAY too much sauce on it. (sorry I didn’t take a photo… no worries you are NOT missing much!)  I brought a mini skor blizzard for the road. First couple bites were Great!  The rest not so much.  The new mini size makes it better when you want to indulge, and tend to finish it even though your done.

When we got to Edmonton, we were off to find a UV filter for my new Nikon, and I happened to find a new sweater when walking by Artizia!  It is a the TNA Lambswool sweater I coveted last year!

The greys are reversed... I like this combo better, but they were sold out of my size for the year already!

We got to the hotel just in time for the kids to go swimming and slide down the water slide for an hour… when I got them back up to the room, I set off to the gym to get in a half hour of cardio a jog on the treadmill and a 10 min cool down on the bike.

Then I made myself this yummy supper of Quaker 100% natural oats, chia seeds, blueberries, and some dark chocolate almond butter.  I love this combo, and yes, I can have it twice a day!

Tomorrow is a busy day, and I might be a little late recapping as My kids start school tomorrow and I haven’t labeled their stuff. Since I have that knee surgeon appointment tomorrow, and we need to buy groceries and a few more items for back to school such as runners for the VERY PICKY Thing 2, we wont be home too early.  Fingers crossed I am not still too fat to get my ACL reconstructed for the second time!

The Story of Picky Nikki and the Elusive Bear!

Haha.. you found me!  I will lead you to the Prince!

One Morning there was a very picky girl who was about to go off on a long journey… to see the elusive bear.

She thought about having a smoothie, but her vitamix was already packed… she thought about having a thin bun with nut butter, but it was already packed too…

She decided on some 100% Whole Grain Quaker Oats, chia seeds, a sprinkling of Kellogg’s fruit and nut muslix and a dollop of Marantha dark chocolate almond butter.

She was sad to have to leave her family and friends behind… but she happened to find a picky family to share her journeys with.

When Picky Nikki and the Picky family was just under way on their journey they discovered a giant snowflake that seemed from another world… but was made by the wonderful People of the Snow in Kitimat of Aluminum (Translated from Haisla, Kitimat  means People of the Snow)On their journeys they came across a logger in Hazelton…

…he pointed them in the direction of the elusive bear they sought, but warned them that first they must encounter the fishermen and the raging rapids…

The Logger warned us it is addictive, that you will continue to watch till he catches a salmon, it’s as though the fishermen put you in a lullabye trance with the sound of the water rushing by.

After leaving the fishermen of Morristown, and when they were almost to their final stop of the night, the Picky Dad saw something black out of the corner of his eye.

He stopped as soon as possible and backed up on the shoulder of the trail (highway) and allowed Picky Nikki to lean over him to take these photos of the elusive bear, who had eluded them their whole trip, all but one very dark night out the window of Picky Nikki’s sister’s house.

 The Mythical Elusive Black bear turned his head in the direction we were to follow, and we soon arrived in the kingdom of Prince George, BC

Every year it is our goal to see a bear on our travels, and usually our best chance of seeing them is from our vehicle on route… this year however we saw almost NO animals on our way up to Kitimat!  Because of the cold rainy weather we joked they were already hibernating after only seeing the one bear in the dark front lawn of my sister without the kids we were pretty disappointed.  So after scanning the sides of the road for 7+hours today we saw one!  It made our day… Picky Hubby even said it was worth the HST we paid when buying the new camera in BC for the couple of good pictures we got!  Well we are on the road again today, we might stop in Jasper to go white water rafting if the weather is decent and we are underway in good time. :)  Our end destination tonight is Edmonton for one last night from home as I have an appointment with a knee surgeon I have been seeing in hopes of finally getting a surgery date tomorrow morning.

Wonderful Wedding Memories

I am sitting in the hotel in Prince George, BC and finally putting the photos from the wedding on my computer, so I figured I would give you guy a recap :)

The whole reason for our trip up to Kitimat, BC this summer was for my cousin’s wedding. Well, it happened this Saturday on a beautiful sunny day.  The clouds had cleared after a morning shower to shine on the happy couple. Congratulations Kaitlyn, and Steve!

Every family has traditions and ours is no exception.  My Mom and her family moved to Canada from Scotland when they were all kids, all 8 of them with their parents… I couldn’t imagine.

We have Horseshoe girls… who present the bride an upside down horseshoe to bring them luck in their marriage

 We have a Family Song… As far back as I can remember my family has done a dance to this song at family functions, it is by a Scottish band called, The Proclaimers.  I am sure most of you have heard of them… if not here is a refresher!


I love it!  It reminds me of the whole Miller Clan I grew up with, and how much love and support we all have for each other!

Sister and her Boyfriend... Hi Cory!

Cory has been bugging me as to why he hasn’t made the blog… I teased him I wouldn’t put him on till he “put’s a ring on it” They have been living together for 5 years… and he keeps talking of a bachelor party…  Hey Cory, you need the ring first! 😉

It may be time… soon?? Right Cory?? I bet you wont be bugging me ever again 😉 I do however have to say this looks good on both of you 😛 (see below)

Speaking of dress-up, my uncle built this great wall to use as a photo booth, there were frames with cutouts and personal wedding photos of the bride and groom’s families, and photos of them as kids.  As well as the wall there were props!  The veil was one of them… (as well as the pig nose you see on the table to the right of my sister) we got a lot of hilarious photos throughout the night, but I am pretty sure I am not allowed to show a lot of them 😛

I can however show this one, as it is Picky Hubby and I!  My Uncle is so talented!

I feel like I should be on the Brady Bunch!

There was a very special dress-up portion of the evening where one of my uncles brought out costumes that he and Kaitlyn and he wore MANY years ago in the Canada parade.  Both their families owned the pizza place that I have talked about on the blog, and to try and get the public’s interest and some “free” advertising they dressed up as Pizza Fairies and sang “That’s Amore” while my uncle played the accordion. It became another tradition… of the parade, and telethon, and other public events that they would perform together.  Kaitlyn as always was a great sport, laughing and belting out “That’s Amore!”

They are missing their wings, but still were amazing!

It was a great time!  With lots of dancing, visiting, eating, laughing… and kissing!


It is obvious how perfect my cousin is for her groom… and her groom for her.

 I guess it is true… All you need is love!

Food, Family and Fun!

I am tired today… I feel like I went to town drinking last night, but I think it is just exhaustion! (especially since I had a half a glass of my malibu and perrier, and dumped the rest down the sink.) 

For breakfast I had a smoothie of two handfuls of spinach, some oats, chia seeds, choc. protein powder, little instant coffee, summer fruit mix, and some ice.  Wow that was a mouthful!

Lunch was some popcorn… yes I know, popcorn. It was of the Simply Food, sweet and salty flavour from Shoppers Drug Mart

 Supper was at the family bbq for my cousin’s wedding.  My uncle once again made my day with his fish recipes…

Every family brought a salad…

There were hotdogs and hamburgers too…but I chose to stick to the fish and salads, as I know I have been eating BAD all week!  Plus I had a bit too much samples of cake and the raspberry buttercream when I had the cake incident 😛

This is the salad I brought.  It is that Presidents choice Blue Menu stuff I talked about on the blog before, here.  All I had to do is chop some spinach up finely and stir it in!

 Lots of compliments on the taste, then on the easy recipe once I let my secret out of the bag!

My favourite Salad on the Table was this beauty!  Avacodos, Tomatoes, Cilantro, Black Beans, and Green Onion.  She said all the dressing is is some lime juice!  I will have to remake this at home!

It was a great time… family, friends and food!  Hubby and I left the kids after with my Mom, and played some Catan with my sister and her boyfriend… I got schooled, BAD!

…Well I am off to finally make myself a smoothie and slowly start getting ready for the wedding.  I can’t wait to see my little cousin get married!

Let them eat Cake!


Pfewf!  Today I finally finished my cousin’s wedding cake… Just in time!  It was a cake of misadventures to say the least.

First white flowers before their demise ;)

First the small white flowers we had made had melted due to the high humidity here… then yesterday a layer of the cake collapsed when I was flipping it on to the bottom chocolate layer!  SIGH!  

Hubby came to the rescue and ran to the store to pick up more supplies, and I rebaked the vanilla 14″ and we were ready to fill and decorate!

It is a chocolate and vanilla layered cake with a raspberry buttercream filling.  
I can’t wait till tomorrow to see my Little Cousin, Kaitlyn get married to Steve! All the cake trials were worth it for such a great couple!  Now I need to get ready for a family Barbeque!

The sun finally came out! Yay! I was able to bring my new camera out of the safety of the house, and my car to take some photos.

The first land mass is by where we ate lunch the other day...

I spent most of the day sadly inside waiting for my sister to come over so we could go out and explore… I should have phoned her when she didn’t show up, as she fell asleep!!  Err…

Supper was some Thai Halibut, Bruchetta mixture with some of the organic tortillas from Costco, and some greek veggie pizza.

My Uncle makes a mean Thai flavoured Halibut, I am going to have to get the recipe!! (Don’t worry I will share it with you…)

Tonights smorgasborg of food was due to the fact my cousin who is a hairstylist for Aveda was doing hair at my Mom’s… Making everyone Pretty for the wedding on the weekend :)

Funny… he doesn’t sit that still for me, OR that quiet!

Tonight is Sister Night!!  I am off to go spend the night at my sister’s.

We got rid of the hubby and kids, and her BF, Whoo Hoo!  I’m hoping now that we have some gum-tex we will get the fondant flower mess straightened out, and finally get some progress on this cake.  Hopefully the lack of rain finally will help the crazy humidity here!  (side note: my dry skin has never looked this healthy!)

Just keep Swimming…

I did Ripped in 30 again this morning… in the middle I got a call that the little white flowers I was making for a wedding cake this morning MELTED due to the humidity here! :(

After I was done, I had an Earth Grain Multrigrain Bun, an Apple,  some Sunflower and Dark Chocolate Almond Butter.  An awake tea with a couple drops of vanilla stevia accompanied the breakfast :)

Now I am off trying to find something to help dry them out and possibly to make a trip out to Terrace to get some Gum-Tex and my aunts food dehydrator.  As Dory from Nemo says… “Just keep swimming, Just keep swimming.”

Quazi Nacho-Salad


Lunch was a quazi nacho-salad. There wasn’t much lettuce left, but there were still a lot of the organic tortillas I picked up at costco, as well as some guacamole so my taco salad turned into nachos with lettuce.  It was surprisingly good!

This afternoon was pretty relaxing, Hubby dropped me off at my sisters, and he and the kiddos went swimming.I spent the afternoon starting to make flowers for a wedding cake I have to make this Saturday. It was great to just visit with my sister as we battled humidity with the fondant flowers and lovely food gel spills :)

Harvest Cookie!!

I had a quarter of this monster of a cookie before supper… shhh… don’t tell my dad!  It’s from a great little bakery/coffee shop here called Constant Cravings.  The owners are pastry chefs and I used to play hockey with the wife in Highschool.  I have tried to recreate these cookies many-a-time at home, but it is never as good!

For supper we went to my Dad’s house again, and my Stepmom makes a mean battered halibut.  I never liked breaded fish till I had her recipe! They also made a battered salmon, but I didn’t enjoy it as much. 



On the side we had a Greek Salad, and some crispy french fries.  It all was so delicious…  albeit not great for the diet!

After supper I ran to my best friend’s house to see her and her family.  On her wall she had this plaque her Mom gave her, which I think suits my family as well… I am going to have to try and find the saying on something for My family!

Orange You Glad… you worked out today?

Whew… I am done another day of Jillian Michaels: Ripped in 30.  Sometimes I wonder how I did 4 weeks straight of this program, and did not die.  I am glad I got up earlier to knock this off today, so the guilt of not working out did not plague me on holidays.

Today my knees were not liking the running men move. Although my mom lives in a ranch-style house on a cement slab, so I am guessing the difference of cushioning didn’t help!

Breakfast was some Yogi Kombucha Tea with a couple drops of Vanilla Stevia…

I sandwiched them together and had some yummy chocolate almondy sunflower goodness!!

I also had an Earth Grain Thin Bun.  On one side I had some Marantha Dark Chocolate Almond butter, the other I had some of the new Sunflower butter I bought, each had a sprinkling of chia seeds.  On the side I had a navel orange…. YUM!

Now off to enjoy another rainy day in Kitimat, BC!
