Oatmeal Flax Chocolate Chip Cookies
Last night we had some of the left over veggie lasagna, on nights when we have leftovers and I am not crazy busy I like to bake something, or pre-make some sort of lunch item for the kids. Tonight I made some Oatmeal Flax Chocolate Chip Cookies. I had found the recipe online last year I think on an american diabetic association website, but can’t find it again now to link to it. Because I was making cookies to freeze, I tripled the batch. I am however sharing the original smaller recipe.
Oatmeal Flax Chocolate Chip Cookies- Makes 4 dozen cookies
(Info from original recipe) This recipe uses less sugar and replaces white flour with whole wheat flour and ground flaxseed to increase the fiber content. Flaxseed is also a good source of Omega-3 fatty acids. The coconut oil adds a nice flavour and is an excellent source of mid-chain fatty acids and in one of the richest natural sources of lauric acid which helps protect against infectious illnesses. (However, as great as these cookies sound… remember these are cookies!! So eat in moderation as a treat!)
- 1/4 c organic butter, softened
- 1/8 c extra virgin coconut oil
- 1/2 c firmly packed brown sugar
- 1 egg
- 3 t vanilla
- 3/4 c whole wheat flour
- 1/4 c ground flaxseed
- 1/2 t baking soda
- 1/4 t sea salt
- 3/4 quick-cooking rolled oats
- 1/3 c semisweet chocolate chips
