Bye-bye pumpkin…

Yesterday after work we had a bit of running around to do…

…an appointment at the bank– which told us we will be just fine at retirement! Yay, even said we could retire closer to 55! That made Picky Hubby VERY happy!   

… I had relented and let Stinky join hip hop dance class again this year provided they moved him back down to the younger group and at an earlier time. Yesterday was his first class! –It all worked out, and now he is talking to me again 😉

… I had a clandestine meeting in a parking lot to trade goods- I had listed a few costumes on a local buy sell page, and met a lady last night to exchange costumes for cash.

Last night for supper it was a quick soup.  Broccoli, carrots, a few baby potatoes and a small handful of real bacon bits, and a chicken broth. Spices added were fresh ground pepper, garlic powder, onion powder and a little dill. Once everything was soft, I just used my immersible blender and pureed the lot.  At the end I added half a cup of greek yogurt to the 6.5quarts of soup, and sprinkled a tiny bit of mozza/cheddar when serving.  As simple as it was, it was SOOO good!  On the side were some garlic artisan rolls.

Breakfast today was another yogurt bowl, and sadly now I am out of canned pumpkin till I go shopping again.  I do have some pumpkin I cooked up last year still in the freezer I am sure I could still use, but the convenience isn’t the same.

In the bowl:

  • 1/2 c 0% greek yogurt
  • half a gala apple chopped
  • small handful of Barbara’s Puffins
  • half of a quaker 100% natural oat packet
  • 1/4 c pumpkin puree
  • a sprinkling of chia seeds
  • T sunflower butter
  • 3 drops vanilla stevia
  • pumpkin pie spice

Once again another score in the meal department… now I am off to work… Have a great day!
