Egg Hunt

Brrr… it’s beautiful but freezing out!

This morning Bubba and I were off  to check for eggs… He went out before me and saw a HUGE moose, unfortunately he and Buddy scared him off before I could snap a photo.  This is SO weird as Hubby woke us all up to warn us about Moose before he went off to work this morning! He said to stay clear of them as they tend to get more aggressive in the fall. Good to know!

Once we got brave enough to go back outside, we found another green egg!  It is pretty exciting still for us, but I look forward to when we start getting some “normal” coloured eggs as well.

I LOVE my new camera on manual mode!!

Here is our Buff Orpington roo… Before we got rid of that mean rooster he used to cower in the coop, and acted more like a hen than a rooster!   We were so proud of him crowing, and strutting his stuff this morning.

Plans for today include, sending Bubba off to a Birthday party after lunch… while Stinky and I are in search of a pumpkin spice donut recipe to share with you all later on today!  Enjoy your Saturday!

Belated Weekly Weigh-in…

This is the bane of my existance!

Well yesterday was my weekly weigh-in, but since we were in a rush to get off to the city, I forgot!  Today I braved the scale, and despite my fears I was down half a pound!  Whoo Hoo!  I know it might not seem like much, but when I spent a summer moving up in numbers two weeks slowly moving down makes me happy!

I am sure if I didn’t eat out lunch twice this week with co-workers, and avoided the maple cinnamon french toast bagel from Tim Horton’s yesterday it would have been better!!

Oh, not to forget my son, Bubba’s, Man vs Food Supper he requested…

Yikes!  Haha… I am really lucky I didn’t gain!

This is a new week, and here’s to an even better number next week!

A Choc-O-Coco Green Monster!

Whoo Hoo!  I scored a deal of 20% off my tile yesterday at Lowes, and narrowed our fridge search down to two.  Both are about 28-29 cu ft and are Samsung and Bosch models.  If anyone out there reading this has an opinion one way or another on each of these units please comment and share your experience, or what you heard!

They are called Crema Marfil Onyx and are 2×4″.  As for counters we are not sure yet.  We are leaning towards quartz for maintenance, but budget may predict the material.

For breakfast today I made myself a smoothie.  I am not feeling very hungry but I know I need to nutrients so I don’t mess up my metabolism anymore than I already have in the past, so this is what was in the mix…

  • 2 handfuls organic baby spinach
  • 1 scoop chocolate protein powder (Promisil)
  • 1 tsp expresso powder
  • 1/4 c dark chocolate almond milk
  • 1 T raw coconut flakes
  • chia seeds
  • 1/2 t cocoa powder
Today’s plan is to go through craft supplies, cook a couple of roasts and do laundry, then…

 … skate with my kids after school and play a little shinny! I’m really looking forward to it, as it will be the first time I have been on the ice since last year.
Wish me luck to let go of my hoarder tendencies and donate a bunch of craft items!!

Renos and Oats

Don't mind that the blueberries are still frozen!

Today we are off to Edmonton to look at fridges, order tile, and hopefully pick a countertop!  Pretty exciting knowing we are finally making some decisions, and that MAYBE this house of renovations may one day soon come to an end, and just be a home!

Breakfast this morning was a Sweet and Spicy Tea for the road (Love this stuff)

 

This has to be the best saying on my tea yet!  I have to agree it is SO true, I just need to start following it!

… and some oatmeal with chia seeds, blueberries and some dark chocolate almond butter.

Don't mind that the blueberries are still frozen!

I have some veggies and hummus and some Wild roots trail mix packed for snacks…

…and we are off! May the decision making fairy be with me… well and let’s be honest, I hope the sale fairy is around today as well!

Oatmeal Flax Chocolate Chip Cookies

Last night we had some of the left over veggie lasagna, on nights when we have leftovers and I am not crazy busy I like to bake something, or pre-make some sort of lunch item for the kids. Tonight I made some Oatmeal Flax Chocolate Chip Cookies.  I had found the recipe online last year I think on an american diabetic association website, but can’t find it again now to link to it.  Because I was making cookies to freeze, I tripled the batch. I am however sharing the original smaller recipe.

Oatmeal Flax Chocolate Chip CookiesMakes 4 dozen cookies

(Info from original recipe) This recipe uses less sugar and replaces white flour with whole wheat flour and ground flaxseed to increase the fiber content.  Flaxseed is also a good source of Omega-3 fatty acids.  The coconut oil adds a nice flavour and is an excellent source of mid-chain fatty acids and in one of the richest natural sources of lauric acid which helps protect against infectious illnesses.  (However, as great as these cookies sound… remember these are cookies!! So eat in moderation as a treat!)

  • 1/4 c organic butter, softened
  • 1/8 c extra virgin coconut oil
  • 1/2 c firmly packed brown sugar
  • 1 egg
  • 3 t vanilla
  • 3/4 c whole wheat flour
  • 1/4 c ground flaxseed
  • 1/2 t baking soda
  • 1/4 t sea salt
  • 3/4 quick-cooking rolled oats
  • 1/3 c semisweet chocolate chips
Preheat oven to 375′F
Beat butter and coconut oil together in a bowl till light and fluffy.  Add brown sugar, and blend well.  Ad egg and Vanilla and mix thoroughly.
In a medium bowl, combine flour, flaxseed, baking soda, and salt.  Gradually ad flour mixture, then stir in chocolate chips.
Drop heaping teaspoon of dough onto cookie sheets, leaving about 2 inches between each cookie.  Bake 10 minutes or until lightly browned. ( I use a Mom’s pantry small scoop so I make them nice and even to help keep calorie count even, and portions small)
Per cookie: 50 calories, 5.5g carbs, 1g fibre, 2.5g fat, 1g protein

Snack were some veggies, and some tea…
Sweet and Spicy tea, and cucumber and peppers :)
I had a great day at work today, and think it’s going to be a great year!

Oh, I have one more exciting thing that happened yesterday to share with you…

I had the best tea at a friend’s house just before Labour Day, and after trying it I was on a mission to find it.  It tasted and smelled like cinnamon hearts.  It was sweet without adding anything… perfection! Way easier to stay on track food-wise if I can get the sweetness in without adding any sugars!  After googling the tea I kept seeing this iherb website, and realized it is advertised on a blog I read. Heather Eats Almond Butter once investigating it, I felt safe ordering from there.  They even had expiration dates of each product on their description page.  If you are like me, I always seem to buy and stock up on stuff that is almost out-dated!!

They have a great selection of health foods and items, or organic home products as well as Justin’s nut butters! They have an incentive that if you click through someone’s link you get $5 off first order, and I happened to order during a Labour Day weekend sale and got an additional 10% off.  Additionally, if someone clicks through your link or uses your code, like I used Heather’s you can earn credit to the store.

They do not pay for advertising, and this is how they get the word out for the store.  Prices are on par and not jacked-up, and they ship to Canada!!  Shipping was very reasonable through DHL.  I got my order in a week, and because I ordered tea for myself and my friend, we shared the costs of these.  Even more reasonable!

Gremlins don’t like Veggie Lasagna

Today was an exciting day!  I had a great first day back to work AND I came upon these at the post office!

They were in a box saying Free Zucchini, Please Take!  … and I did!

These puppies helped me make make this creation!  Bubba has been asking for lasagna, and using the zucchini, some pre-made polenta, spinach, and some cheeses We had an amazing baked gluten-free veggie lasagna!

 

First I sprayed some canola oil on a glass baking dish with my mister, and layered some thinly sliced polenta, and zucchini…

I then layered some pre-made pasta sauce, spinach, and more zucchini…

My next step was to add some dry cottage cheese and parmesan cheese (as it is what I had on hand at home)

I placed one more layer of zucchini on the mixture, some spinach and sauce then topped it with copious amounts of mozza and parmesan cheese.

 As much as Stinky looked excited for the Veggie Lasagna, he refused to eat it! Err… he frustrates me!  His reasoning, he doesn’t like the ingredients, so he wont like it.  Sigh! I wish he hadn’t been home when I made it and then it wouldn’t have been an issue.  I’m positive he would have ate it happily.  He finished his bun and nothing else, and I refused to give in… so off to bed he went. (Yes I am the meanest mom in the whole world!)

Sometimes, well more than sometimes, I wish kids came with a manual… somedays I think taking care of Gizmo would be easier!  At least I would know not to feed him after midnight, not to get him wet, and avoid bright light.  And I would have a cute cuddly little pet/child… like I used to!

Apparently, I didn’t follow the “rules” with him as I tend to have the grouchy gremlin around here lately instead of a cute Mogwai!

Well I am off to wrap his food so he can eat it if he is hungry later!  I am NOT giving in this time!

First Day Back to Work

Well it is finally time for my summer to end… :(

As much as I like what I do, I can’t help wish I could just stay home and get some stuff done.  In the past couple of days we have made a bigger mess with the overwhelming amount of stuff I talked about in the Too Much Stuff post. We have been trying to sort through the Furnace room storage and deciding to donate, keep or sell. Sadly we are a LONG way from finishing.  We need this room empty in order to finish jackhammering the concrete and get the pipes into the floor… plus I need it cleaned out so I can check it off my monthly goal list for September!

Well enough of that… let’s talk about Breakfast!  As you will come to realize I tend to have smoothies on work days, as I can drink them on the way and at work without wasting too much of my “getting ready for school” time.

In the vitamix this morning:

  • 2 handfuls of spinach
  • 1 c of summer fruit medley (Europe’s Best)
  • chia seeds
  • expresso powder
  • Davinci sugar-free chocolate syrup
  • 2 c ice

Mornings tend to be consumed getting the boys fed, clothed, and groomed.  Stinky(Thing 2) tends to fight me on clothing, and hygiene, and despite laying out our clothes the night before, things just aren’t “right” in the mornings. sigh!  Today was no exception!!  Smoothies just give me that little bit of extra time that I am not sitting down and eating.

Snack I packed for my Morning was some carrot sticks, a cut up baby red pepper, and a mini cucumber…

Well I am off!  I can’t wait to meet the new kids I get to work with this year!

FYI: I’m not sure I have ever said what I do for work on here… I work for the school district in the Early Intervention Program.  I get to spend my day working in a classroom and one-on-one setting with some pretty great children who happen to have learning, speech, and/or motor delays.

TOO MUCH STUFF!!!

The past couple days have been consumed with housework, from hauling up concrete as my hubby makes a trench in our basement to put all our drain pipes in the ground, to going through our furnace/storage room.

So far I have found two rubbermaid containers of baby clothes…  and 3 Large rubbermaid containers of halloween stuff… WHY DO I HAVE SO MUCH STUFF?!?!  sigh!

Have you ever watched the show Consumed, on HGTV?  It’s almost like it is a pre-hoarder show.  As much as I call myself a hoarder, I don’t have dead animals, and garbage everywhere and I do have a floor!! I would say I have two rooms that should be on consumed… they are “storage” rooms, but what are we storing it for?!?!  Why do I still have baby stuff? …skates and shoes that don’t fit us…

I am not sure I could do the one plate, one cup, one set of cutlery per person, and 10 non-essential items for the WHOLE family.  This includes computer, tv, camera, hair straighteners, or blow dryers, make-up… I alone would hog my families non-essential items to continue doing this blog!  Plus, they only allow one carry-on sized suitcase for all your clothes and shoes for the month per person…eek!   How many of you could do that??

One is by the author of Clutter Rehab:101 Tips and Tricks to Become an Organization Junkie and Love It!  Laura Whittman is a Canadian blogger, and Organizer. Her website is called, I’m an Organizing Junkie  she discusses everything from organizing your clutter to menu planning. It is a great resource for those needing some ideas to stop the clutter!

I also like this blog, Small Notebook  it is a great blog that sadly isn’t updated as often as I would like, but every post is full of a insight, or  a project.  She has great photos, and great ideas!  From editing your wardrobe to your finances… plus now she is renovating her house, and give some food for thought on what to change, and what to accept :)

As well we have spent some time at the new arena in town, as the grand opening was yesterday.  I flipped burgers for a few hours in the booth, and my son played his first shinny game in there.  Since I was in the booth, and Hubby is not the photo taking kind…  I have NO photos :(

All Wrapped up!

Yesterday in between running to town, and painting I had some quick wraps for lunch and supper!

Lunch was:

  • ancient grain tortilla
  • 1/2 a chicken breast
  • mini cucumber
  • spinach and artichoke hummus
  • tomato slices
  • a sprinkling of tex mex cheddar
  • baby spinach
with a handful of cherries on the side :)
Supper was:
  • ancient grain tortilla
  • black & black eyed beans
  • spinach
  • ground beef
  • avocado slices
  • fresh salsa
  • dollop of greek yogurt (0%)
  • shredded tex mex
Today was our kids’ annual back to school pancake breakfast, however we just went to to see their classrooms and to participate in a few of the team building games after.   I have to say we are pretty lucky to have the great teachers we do that take the time to plan such activities and make the school a part of our community! They played a game called mountain that made it look like it was a school for Zombies!  Kids walking around with their arms outstretched bumping into each other!
Since I didn’t partake in the pancake breakfast I had a Peanut Butter Peach Pirate Smoothie!
In the Vitamix:
  • 2 handfuls spinach
  • 1 med peach
  • T Choc. PB2
  • 1/2 t cocoa
  • chia seeds
  • 1 splash Davinci sugar-free choc. syrup
  • scoop choc. protein powder (Promisil)
  • 2 c ice
Shhh… don’t tell Stinky (Thing 2) I used his Pirate cup!  
It’s going to be a hot one again here today, and it’s my last day at home without the kiddos before I start work again next week, so I am off to make it count!
