I wanted to use up a few apricots I had maybe bought a few too many at the fruit stand this week, and was trying to think of a yummy recipe that would include them… Cinnamon Bun in a Cup Smoothies! The nice thing about apricots, and peaches is they don’t fight with the flavours of the smoothie.(Bananas are the same, but since I am recently allergic I don’t add them!)
In the vitamix (or blender of your choice)
- large handful of Baby Spinach (Organic Girl)
- 2 small apricots (frozen peaches or bananas would be a good substitute)
- 2 T quick oats
- 125 ml Silk True Almond milk
- 1 scoop chia seeds
- 1 scoop unflavoured protein powder (Isonatural Whey Protein)
- 1/2 t cinnamon
- Stevia to taste
- 2 c ice
Blend till smooth and Enjoy!
