Flourless Lemon Blueberry Chia Muffin in a Minute!

Here is another one minute flourless muffin recipe, which is actually my favourite one that I make!!  It tastes kind of like a lemon poppy seed muffin with blueberries.

What you will need…

Ground Flax, an egg, chia seeds, baking powder, packet of stevia, Barlean's omega swirl- lemon zest

This is filled with healthy Omega 3 fats.  Fats are good for you… don’t freak out– it will be okay! I promise! All but 4g (from the egg) are from the flax, omega supplement, and chia seeds.  :)

They are great for a warm comforting breakfast, or cut into thirds like a homemade vitatop.  Without the top 😉

I have not talked about The Simply Bar before on here, but have been enjoying the Coconut Pineapple one for some time.  I have not tried them all, but they are Gluten free, Vegan, Milk-Free, Kosher, and a Canadian Brand!  I plan on ordering some flavours I haven’t tried online asap as they have a sale on! (I’ve previously bought them at health food stores or bulk barn)

 

So there you have it… My first ever giveaway, and it is all Gluten-free my friends who are following a  GF diet!! :)

Orange You Glad… you worked out today?

Whew… I am done another day of Jillian Michaels: Ripped in 30.  Sometimes I wonder how I did 4 weeks straight of this program, and did not die.  I am glad I got up earlier to knock this off today, so the guilt of not working out did not plague me on holidays.

Today my knees were not liking the running men move. Although my mom lives in a ranch-style house on a cement slab, so I am guessing the difference of cushioning didn’t help!

Breakfast was some Yogi Kombucha Tea with a couple drops of Vanilla Stevia…

I sandwiched them together and had some yummy chocolate almondy sunflower goodness!!

I also had an Earth Grain Thin Bun.  On one side I had some Marantha Dark Chocolate Almond butter, the other I had some of the new Sunflower butter I bought, each had a sprinkling of chia seeds.  On the side I had a navel orange…. YUM!

Now off to enjoy another rainy day in Kitimat, BC!

From PG to Kitimat :)

Yesterday was day 2 of driving… Shorter drive than the first day,but LONG nonetheless!

Breakfast was a 1/2 hot chocolate 1/2 coffee and a Tim Horton’s plain oatmeal to go, that I fixed up a little :)

So much better now!

The addition of Chia Seeds, Blueberries, and Marantha Chocolate Almond butter made it delicious!

Lunch was a slice of left over Tropical Chicken Pizza from our Boston Pizza Hotel Delivery last night… no worries as it was stored in a cooler :)

Thing 1 and Me!

Finally we arrived in Kitimat, after stopping and purchasing a new camera for me in Terrace.  I am the proud owner of a Nikon D7000 now! I bought an 18-200 VR lens with it, so I could have a “do it all” lens for my everyday :)  I can’t wait to check out all it can do!  (Thankfully I have a photographer for a friend who reads this…and promises to help me figure stuff out on it.) I probably should have bought it in AB as I had to pay HST… but since I got out-voted in waiting till stores open in Edmonton on Friday, and I wanted the larger zoom for this trip… the monetary difference is worth it.

Supper was a Mexican Night with my Mom, Sister, Her BF, Hubby and my kiddos…

I made mine into a salad so I could get the most toppings, and lettuce… YUM! This maybe made up for the Beer Margarita I had 😉

Coffee and Oats…

Aquafit last night was cancelled due to weather :(  Which means I better get my butt in gear at home, and bring a DVD with me when we go to the wedding as I am feeling BLAH! After the cancelled aquafit disappointment and procrastinating about packing, I stayed up WAY too late!  I needed COFFEE this morning!!

Protein Oats were my eats of choice this morning… I honestly didn’t know what to have.  I’m not that hungry, and I didn’t want to wake up my family with the hum of the vitamix…

All the mix-ins

In the bowl:

  • Quaker 100% Whole Grain Oats packet
  • 1 scoop Chocolate Protein powder
  • 1 t Chia Seeds
  • Boiled Water
I put it all in a bowl, and microwaved it for an additional 30 seconds so it had the wonderful souffle like texture.  Topped it with some Coco-Loco, and a tiny bit of almond butter and dove right in…. I guess I was hungrier than I thought?
I’m off to the hairdresser today… hopefully for just a trim, and colour.  I had a not so great experience there this spring when my Hairdresser was off work for a couple of months, and I used her replacement.  I have been putting off an appointment as long as I can, as leopard print dye job is not what I want to be sporting at my cousin’s wedding next week… will keep you updated 😉

Chia seeds are amazing!  Not only because they can grow fake sprout hair on a piece of pottery… They are a superfood! 

Chia Seeds on Smoothie (and in)

“Chia seeds are full of Omega-3 fatty acids, protein, dietary fiber and oil. Chia seeds are also high in anti-oxidants and have been found to be beneficial to diabetics due to their ability to inhibit the speed of carbohydrates being turned into sugars. The seeds are also being used as a diet aid because they help a person feel fuller and, therefore, curb hunger.”  Excerpt from:What Are Chia Seeds?

Chia Seeds on Salad

You can add Chia Seeds to almost everything!  From on top of a salad, yogurt, toast, to adding a tsp to a smoothies or oats! Use them in baking anywhere you would use flax!

They really have NO flavour, and you can blend them to a fine texture so you cannot feel the texture on your tongue.  Or you can let them get a jelly coating on them as they absorb water almost like a mini bubble tea texture. I like them either way!

Don’t buy the processed tablets you will see online or in stores!  Just buy the seeds, in containers, bags, bulk, much more cost effective, and is more natural! White vs dark, it doesn’t matter they have the same nutritional content :)

Give them a try… if all else fails spread the left over seeds after soaking them, on a piece of pottery and make a chia pet 😉

Big Ol’ Bowl of Smoothie!

In the Bowl:

  • baby spinach and romaine
  • A handful of snow peas
  • half a beefsteak tomato
  • julienne slices carrots
  • a mini cucumber
  • M&M Meat Shops Bistro stuffed Chicken, Spinach & Ricotta (160cal)

 

Last night at aquafit the instructor changed it up and did intervals, with some plyometrics IN the water.  It was great, I could feel the burn, and had to work way more than normal, which is awesome, as that is why I go! (This however didn’t stop me from muttering under my breath about my “love” for her!) There was a midnight swim at the pool after the class, and since my kids played nicely at the playground while I did  my thing I promised I would let them stay for an hour.  I had tread water for probably an hour being the only adult in the pool. When a friend of mine showed up to watch her kids from the deck, so I got out happily and visited till 11:30. The kids were in their glory!  …swimming outside with their friends WAY past bedtime!

This morning I felt a like a smoothie but felt like I wanted to “eat” something so a smoothie in a bowl was in order :)  To help make the smoothie even thick and creamier I added a pinch of Guar and Xanthan gums…

Today’s flavour was Chocolate & Peanut butter with some PB Granola sprinkled on top!

In the vitamix:

  • couple handfuls of baby spinach
  • tbsp PB2 powder
  • 1 scoop chocolate protein powder
  • 1 tsp chia seeds
  • 2 baby apricots
  • 1 1/2 tbsp greek plain yogurt
  • 1/2 tsp cocoa
  • 1 shot of Davinci Sugar-free Chocolate Syrup
  • pinch of guar and xanthan gum

cal 268g    carbs 21g    Fat 5g    Protein 36g    Fiber 10g

With the added PB granola (33 cal, and worth every single one of them!) It made it seem like an even better treat!

I have some running around to do today, and am going to prime the outside of the house where the new bay went in a few weeks ago, as it has finally been a couple days without some rain!  Have a great day!

Overnight Oats in a Jar (OOIAJ)

For once I planned ahead, and finally made overnight oats in a jar again.  I have been thinking of them a lot lately, however, it is usually when it is too late to make them for the meal I want! … like 9am when I am wanting something to eat NOW!

Overnight Oats in a jar mixSo last night I got out a mason jar, as I didn’t have any nut butter jars empty, no worries, as I faked it!  Marantha Dark Chocolate Almond Butter… sigh… true love!

Into the Jar went:

  • 1/3 cup Large Oat Flakes
  • 2/3 Almond Milk
  • 1 scoop Chia Seeds
  • Dark Chocolate Almond Butter

Ready for the Fridge...

I spent the night dreaming about all the wonderful flavours of peanut butter from Peanut Butter and Co.  I had bid on a sampler The Big Six at #TGFA… only to be outbid at the last minute :(  I then frantically spent the evening trying to find things to bid on that were still going AND shipping to Canada.  I did end up winning an auction in the end.  It was an amazing fundraiser, and Janetha G deserves a round of applause!!  In the end with her guidance the online community raised $26,432, through auctions and monetary donations.

…and I woke up to this! :)

Should Have Ate My Apples…

…as the old saying goes, An apple a day keeps the Doctor away…sigh!

I have been putting off having a physical for sometime now, to the point the new Dr who took over for mine, put a note in my chart that they will not fax a Rx refill unless I get one done first!

So today off to the doctor I go:( 

Today I started the day off with An Iced Coffee with some Silk True Almond Original and a shot of Sugar-free Davinci Chocolate Syrup.

With a  toasted Earth Grains Bun with Marantha Almond Butter, Sliced Strawberries, and a heavy sprinkling of Chia seeds under and over the Strawberries. On the side I had some amazing Rainier Cherries!  Oh how I love Cherries :) Total Calories 212

I have been logging my calories at www.myfitnesspal.com for, wow, uhmm… 5 months now!!  I find it easy to use, and it has a great community there, and best of all it is FREE!  I have dropped from 199lbs to 173 using their site, however, due to some recent laziness, some fighting with my thyroid meds, and eating crap foods, I am back up to 180.5 :( Sigh… Which is part of the reason I wanted to start this Open journey with all of you!

Well I am off to drop the picky kiddos off at the swimming pool for an afternoon swim, then I am off to the dun, dun, dun… eek, Doctors!
