Need to Catch Up?

Yesterday after work I came home and had some lunch, Sweet Potato tortilla chips, and salsa… I know not healthy, but it was quick and I was hungry!
After we went to town and switched over our vehicle registrations to be in both of our names, finally after almost 12 years of owning a vehicle together, we came home I thought I would go and check if there was an egg yet today in the coop. I ended up coming across one of the hens and a rooster in the nesting box. I scared them, and they scared me… I watched them run out of the coop, and then go back in right away. Being that they only go in the nesting boxes to lay an egg, I decided to peep at them through the coop’s window. I have to say, WOW… it was pretty amazing to see the effort a hen puts in to lay an egg that I so effortlessly crack into a cookie recipe, or hard-boil into an egg salad.
Here is how it went down… First he went into the nesting box, and made some sounds for her to follow, I assume. As that is what happened. Once she was in it with him, she squeezed to the back, and laid there, turning, adjusting, making noises, for almost half an hour. When it was almost time she almost vibrated made some gurgling noises, then got up and crouched, and plop, out came a perfect egg! He stayed there the whole time keeping watch, and sheltering the hen. It was so neat to watch, it was like they were a little married couple. Once she laid the egg they became derelict parents and he bailed and she ran out of the coop right after him…
For Breakfast this morning I had a yogurt bowl…
- 0% greek yogurt (Liberte)
- canned pumpkin puree
- Barbara’s Puffins
- chia seeds
- part of a pumpkin pecan muffin
- Sunflower butter
- couple drops of vanilla stevia
Now I am off to cover at another school as they haven’t hired someone yet… sigh!
Today has already been a sad but happy day, and a just plain freaky day of firsts! Wow.. and it’s only 10am!
Today was the boy’s first day of school for the 2011/2012 school year.
After a bit of being worked up about a new year, and a new teacher from the older more sensitive one yesterday… this morning went really well!!! Well… minus Aidan’s break down about the shirt he was wearing. He picked it and NEEDED it… but today said it was too big, sigh, I knew that would be an issue at purchase when he tried it on. I guess that is the price he pays for buying a shirt for the colour when the size wasn’t right 😛
Hubby made pancakes for the kiddos and him, and I had a smoothie instead. I had a personal sad day stepping on the scale after almost a month of not… I am up, A LOT! I guess back to the grind I go… re-losing the poundage I already did… then hopefully one day even more 😛 A girl can dream…
When we came home last night from holidays we found our barn cat had had kittens… 7 of them! Sigh! How do they get pregnant so quick?!? …and does anyone want a kitten?
My most exciting part of my morning was when we checked on the chickens. When going in the coop I saw there were some eggs in there! Our first eggs from our chickens. So far it is just the Ameruacanas laying, which is pretty cool as they are a pretty light greeny-blue.
When we talked to my SIL and she said she had seen about half a dozen in there I went back with a bucket to dig and inspect for others so they don’t go bad. On my way to the coop I was headed off by three roosters who had been let out this morning to free-range. When I had continued to go towards the coop the black one we had decided to keep when we whittled down the numbers this fall decided to run after me!!! I am sure it was a sight! I was running and screaming for my hubby as it came after me… usually they are just curious… not chasing! I threw my bucket in it’s direction and it didn’t slow down… and kept on coming… 5 kicks in its direction and it wasn’t scared. My hubby couldn’t hear me from the house, and finally after connecting with the rooster with my foot a few times (not hard… and he was going to attack me so all you PETA people back off) he started to back off. Between the beak and his spurs I was SO scared! My throat is raw, and my heart was pounding. Finally Picky Hubby came out thinking maybe something was attacking the chickens…. not the chickens attacking me!
Needless to say that isn’t the rooster we are keeping… we are too chicken to butcher so I am not sure how we are going to thin them down. Wish us luck!
Here is the smoothie in a bowl that helped soothe my raw throat!
In the mix:
- 2 cups of Organic Baby Spinach
- 1/4 c chocolate almond milk
- 1c frozen summer fruit mix
- 1 scoop choc. protein powder (promisil)
- 1t chia seeds
- Davinci sugar-free chocolate syrup
- 1-2 c of ice
I added some Puffed cocoa quinoa on top… it was delicious!
Now to try and get caught up from holiday absence, and get a workout in at some point… or does a rooster sprint count?
When picking up our eggs today from my neighbor we learned that one of her hens successfully hatched her own clutch of eggs! Me, being me, and a fellow chicken owner I was excited! We have only hatched eggs in an incubator and have never had any of our chickens lay (whole other post 😛 ) So back to the vehicle I went to grab my camera, and then I set out to see the circle of life in action.
The were the sweetest little fluff balls following around their mom, and searching for food. It was really neat to hear her chirp and cluck to her chicks to communicate with them, especially to a larger teenage chick that she adopted. She yelled at him a few times! It sounded like a honk almost…
She also had 3 pigs! Oh, how I want a Wilber of my own, however I know it’s fate, so at the auction it stays!
I love getting free range eggs from our neighbour… however, I will love it even more when we get to start collecting our own eggs from our Chickens!
Once we got home, my hubby being all so sensitive, said he had a hankering for egg salad sandwiches… after thinking about it for a moment, and the thoughts of cumin and curry came to mind, and I agreed…
In the pot they went…
For the sauce:
- Reduced fat Mayo (you could use greek yogurt instead and make it clean)
- Curry Powder
- Flax seeds
Slice up some egg…
Top a leafy green, and cucumber on some sprouted grain bread, and we enjoyed with some fresh fruit! Don’t mind the bite out of the watermelon as I was starving while making lunch, and taking photos didn’t help! lol
Nothing like fresh! Have a great one! Off to spend some time with the family!
Today Hubby is off and we celebrated the day off with some of the yummy Turkey Sausage Breakfast Patties I got last time in Costco with some farm fresh free-range eggs from my neighbour (My chickens still aren’t laying yet… will talk about them more another post) on mini ciabatta buns and some yummy watermelon cubes!
