Quazi Nacho-Salad


Lunch was a quazi nacho-salad. There wasn’t much lettuce left, but there were still a lot of the organic tortillas I picked up at costco, as well as some guacamole so my taco salad turned into nachos with lettuce.  It was surprisingly good!

This afternoon was pretty relaxing, Hubby dropped me off at my sisters, and he and the kiddos went swimming.I spent the afternoon starting to make flowers for a wedding cake I have to make this Saturday. It was great to just visit with my sister as we battled humidity with the fondant flowers and lovely food gel spills :)

Harvest Cookie!!

I had a quarter of this monster of a cookie before supper… shhh… don’t tell my dad!  It’s from a great little bakery/coffee shop here called Constant Cravings.  The owners are pastry chefs and I used to play hockey with the wife in Highschool.  I have tried to recreate these cookies many-a-time at home, but it is never as good!

For supper we went to my Dad’s house again, and my Stepmom makes a mean battered halibut.  I never liked breaded fish till I had her recipe! They also made a battered salmon, but I didn’t enjoy it as much. 



On the side we had a Greek Salad, and some crispy french fries.  It all was so delicious…  albeit not great for the diet!

After supper I ran to my best friend’s house to see her and her family.  On her wall she had this plaque her Mom gave her, which I think suits my family as well… I am going to have to try and find the saying on something for My family!

12 years of Friendship and Fish!

Today was the 12th Anniversary of when Hubby and I met… I had kind of forgot, till he said he arranged for my Mom to watch the kiddos and he was taking me out for lunch.  The wheels started turning then, and I figured it out 😛  I am SO not a girl when it comes to those things!

The restaurant we went to is in Kitamaat Village just outside of the town I am from… gorgeous views of the ocean from the tables.  If you are ever out this way check out SeaMasters!

Huge Halibut burger!!


I had a Halibut burger!  YUM!  with some Lemon Thriller tea and a side ceasar salad.

Hubby had a seafood platter, with halibut, clam strips, split prawns and calamari, with some Boston Clam chowder as his side.

While we were out, my Mom and Thing 1 set out to cook their annual Salmon Dinner.  Every year they go through her recipe books and find an idea, and as my Mom would say, Create!

After scraping scales, and cutting the slippery salmon into steaks, they marinated it in a cajun style sauce, and used her fresh herbs from the garden.  (I am not privy to the recipe, but all I can say it was amazing!)

A Fish Feast!

After supper I had a great visit with my aunt and uncle who actually introduced my hubby and I.  They had their little grand-daughter with them, and oh, I wish I could have stole her!  She is such a cute and sassy two year old!

Wow… it was a great day!  I love fresh fish, but I love friends and family more!
