I learned yesterday that I have some young readers out there… namely, my kids! Yesterday afternoon after school my youngest, Stinky freaked out looking for the apple pie. Apparently he doesn’t always READ the content, but he does look at the pictures. After he searched the fridge, and cupboards, and even the cold room and freezer he finally was willing to listen to me, and go through the post. I explained I had a fake apple pie, and that photo of the pie slice was not mine. After we finally got everything straightened out I agreed to make him and Bubba one of my psuedo apple pies for dessert. It was a healthy dessert option and a win with both kiddos!
Supper last night was some Salmon we brought back with us from BC, and a reproduction of Pat’s Salad I had at there as well.
Today Picky Hubby has been sleeping, and I ruined a couple batches of cookies by forgetting about each pan in the oven… How does someone keep forgetting!?! Yes I am talented! Once the kids are out of school we will be off to pick up some lumber and supplies… Guess what we are doing this weekend??
…If you guessed slaving over our house, you guessed right!! Fingers crossed something actually gets DONE!!
I will leave you with a recipe for that amazing salad… if you try it, please share if you liked it or not! Measurements are a little estimated… if you like more avocado add more, or black beans, or tomatoes ect!
Avocado Black Bean Salad
- 1 avocado
- 1 can black beans rinsed
- 1 large tomato or a couple smaller ones, diced
- Sprig of cilantro (I used freeze dried stuff and it turned out)
- green onion chopped (1 stalk or more if you prefer spicier)
- tsp of lime juice
Stir and enjoy! It tends to get even better with flavour as it marinates in itself in the fridge. The lime juice prevents the avocado from turning brown.

Guess what I found the other day… FIGS! Yay, I found some fresh ones at on our way home from holidays!
I love fresh figs in salads…
On Thursday I even had a fig salad for two meals!! Above is Supper, below is Lunch…
In the salads I put some goat cheese, and pecans I candied quickly in a pan. After it was done I squeezed a quarter of a clementine on the salad in place of a dressing. Supper’s salad included a small chopped chicken breast. Both were SO good! Nice and Clean!

Sooooo easy, and not a big deal to do a single serving to toast frozen nuts to add to salads (I freeze my pecans since my Mother-in-law told me it keeps them fresher longer but they do not taste great added to salads or other foods raw from freezer IMO)
Breakfast today was a clean AB&J! Just Almond butter and fresh figs sliced on top of some Earth Grain’s Multigrain Thin Buns.

Big bowl of Salad for supper last night!
In the Bowl:
- baby spinach and romaine
- A handful of snow peas
- half a beefsteak tomato
- julienne slices carrots
- a mini cucumber
- M&M Meat Shops Bistro stuffed Chicken, Spinach & Ricotta (160cal)
Last night at aquafit the instructor changed it up and did intervals, with some plyometrics IN the water. It was great, I could feel the burn, and had to work way more than normal, which is awesome, as that is why I go! (This however didn’t stop me from muttering under my breath about my “love” for her!) There was a midnight swim at the pool after the class, and since my kids played nicely at the playground while I did my thing I promised I would let them stay for an hour. I had tread water for probably an hour being the only adult in the pool. When a friend of mine showed up to watch her kids from the deck, so I got out happily and visited till 11:30. The kids were in their glory! …swimming outside with their friends WAY past bedtime!
This morning I felt a like a smoothie but felt like I wanted to “eat” something so a smoothie in a bowl was in order To help make the smoothie even thick and creamier I added a pinch of Guar and Xanthan gums…
Today’s flavour was Chocolate & Peanut butter with some PB Granola sprinkled on top!
In the vitamix:
- couple handfuls of baby spinach
- tbsp PB2 powder
- 1 scoop chocolate protein powder
- 1 tsp chia seeds
- 2 baby apricots
- 1 1/2 tbsp greek plain yogurt
- 1/2 tsp cocoa
- 1 shot of Davinci Sugar-free Chocolate Syrup
- pinch of guar and xanthan gum
cal 268g carbs 21g Fat 5g Protein 36g Fiber 10g
With the added PB granola (33 cal, and worth every single one of them!) It made it seem like an even better treat!
I have some running around to do today, and am going to prime the outside of the house where the new bay went in a few weeks ago, as it has finally been a couple days without some rain! Have a great day!
